how easy is it to convert from auto to manual
what is the difference in fuel consumption between auto and manual

LOL, I am going the other way ! I am going from manual to auto on a V8 !

Transfer box is the same, you will need the gearbox obviously and a new pedal box.  Clutch, go for a new one.  Clutch master cylinder (Disco 1, not sure about later models) you can remove the gear oil cooler or seal it off.

You will also need the manual gearstick knob and gator.

out of curiousity why do you want to go from auto to manual? if i could i would want to go the other way especially on my V8 as it would make it much nicer to drive offroad
