Is it a good idea to fit 30mm wheel spacers to my 2" lifted cherokee xj with 30" muds? I've heard somewhere that it may be better to leave the offset as standard, but I like the look and added stability.

I would think that adding spacers would increase the chance of tyres rubbing the arches instead of being snug inside them.

Don't do it.
If you fit spacers you'll just rip the arches of as soon as you stuff a wheel into 'um.
