Disco servicing and maintainence

I have just purchased a disco!  Its a 1995 N tdi XS with 123,000 miles on, I have had a disco before years ago so know the ins and outs roughly.  I am going to get some chunky tyres on steel rims from ebay to get ready for the 4x4 fun day in Briercliffe near Burnley on the 8th Jan and obviousley remove the side skirts.  The car has history up to 110,000 miles but not main dealer or LR specialist.  I want to spend a Saturday tinkering and servicing for my own piece of mind before abusing it off road (and using it every day), what does anyone suggest I should be changing/checking, what are the service intervals on areas such as engine oil, diff oil, gearbox oil I have read about blanking off EGR valves, what difference will I see if I get this done? etc

Axles, swivels and gearboxs (2 of them) change every 2 years 24,000 miles of regular use,

Engine at that mileage needs looking after, every 3 to 5,000 miles.
