realistically is it advisable sensible or safe to use j7 rims with 750 tyres?

I wouldn't think it's a problem. 750 is 7.5". I'm sure someone with more expertise than me will confirm one way of the other though  :D

Yep, will be perfectally fine
300tdi, southdown snorkle, tubular bumper, tds winch with dyneema, tree sliders, 6 spotlights, creepy crawler tyres, 2" lift, dislocation cones, dropped mounts all round, wide angle propshafts, mud dash, bucket seats
