Get yourself a Landy to get really muddy though.
I've got the ideal one for you, a series 3 safari SW, but it owes me about £800, so its going into a farm sale on Saturday. I know you don't have that much in the budget, otherwise I would've offered it to you mate.

i thound on i total offroad for 500 but it need welding but its got  2.25 ENGINE IN IT but if i find a defender wot needs a engine i can get me dad to get both

500 quid is lot of money for a old series wreck wi a knackered chassis Matty.

My Series has had a front quarter chassis / rear cross member / halogen lights / has a set of MTs / set of 750's / webber carb / K&N filter.
Comes with a good spare g.box (the one thats in it is noisy in 2nd & 3rd) / thule roof bars / light guards / & any series spares I can find in the garage!!

Anyone who wants it would have to be quick though :D

Oh!
I should mention that it needs a front prop (its really shagged), but its got freewheeling hubs so it drives fine :D

btw its no basket case, Its got tax n test til the summer & I've been driving it every day for the last 9 months with no probs.

Its worth a fair bit more than £800 but I know that you're after something & thats what it owes me!
But this offer is only on til the weekend, when its going into an auction & the offer aint open to anyone else, just you, trying to get you onto the Landy ladder mate!!
