Just noticed earlier that my 1991 disco tdi is making quite a bit of noise while turning, so checked the power steering fluid and its not full but there is a lot in there still.
any ideas??

It has probably got low at some point and sucked in some air, top it up and turn the steering from side to side gently from lock to lock, this should help bring the air out, keep checking the level to make sure it doesn't suck more air in.
The other possibility is the steering box or feed pipe from the reservoir leaking or sucking air in, any sign of fluid leakage?

The steering box seems a bit wet but not really any drips anywhere around it though.
will top it up and give that a try.
