Power steering pump on teh way out?  The squeak could be the pump bearings seizing - is the belt wearing pretty fast as this will alos point to a partially seized pump - the drop in level wont help either as the pump is lubricated by the steering fluid.

Could be a loose or damaged belt, check that first, if the belt got wet when you were in the mud, that could made it slip, if it slipped for long, it could have got hot and stretched....

Discovery belts are prone to squeaking so i wouldnt worry too much about that. If you are constantly having to top up the PS fluid then there is obviously a leak which is most likely the cause of your temp loss of power steering. My advice is to find the leak first before going any further. there are not many pipes to look for a leak on so it isnt difficult. you have a reservoir which feeds the pump which supplies the power strg box. from here it returns back. give it a good clean, dry all pipes and give it some lock to lock. dont hold it on lock for long as it can damage the power steeering box.
