Can anyone point me to some links giving diagrams for fitting new brakes all round on a disco?
I have tried the search button but it pulls up hundreds of non related topics i cant be bothered to trawl through!

When you say new brakes, do you just mean the pads, pads & discs, pads, discs & calipers or the hydrolic system like the master cylinder?
A Haynes manual would be a good investment if you're looking to do your own repairs.

Sorry just pads and discs front and rear. Is it essential to get one of those fitting kits with new gaskets and stuff?

i would get new Half shaft end cap Gaskets as they normally split coming off or you can put silicone sealant / Mastik on them instead

As you need to remove the hub to change the disc then a new rear hub seal is also advisable, and re-grease the wheel bearings while you've got it apart.
